The Neapolitan Arch narrows the oven mouth aperture, enhancing heat retention and enabling the air temperature inside the oven to reach higher levels. This design creates the ideal environment to cook authentic Neapolitan pizza with perfectly risen dough and characteristic leopard-spotted crust.
Neapolitan pizzas require extremely high temperatures—typically around 450°C (845°F)—and quick cooking times of 45 to 60 seconds. The arch helps maintain full heat saturation, ensuring your pizza cooks evenly and rapidly, producing the signature char and light, airy texture that defines traditional Neapolitan style.
